Healthy Dairy Free 5 Minute Overnight Oats

I eat mainly the same things for breakfast in rotation. I’m happy eating the same thing every day, as long as it’s got some decent nutritional value. Right now, I’m loving these prep-ahead oats.

Up until now, I hated the thought of overnight oats. I thought they were a bit trendy and would be cold and soggy.

But, I got a bit experimental one day and the result is this. It’s plant-based, dairy-free, high in omega 3 and protein. I cover it with berries to give me an antioxidant and vitamin C boost.

Ingredients

1/3 cup rolled oats

2 tbsp chia seeds

1 banana

2/3 cup alternative milk – I switch between vanilla flavoured soy milk, and coconut milk

1/3 cup water

1 tsp cinnamon

½ tbsp flaxseed, to serve

 

 

How to make the oats

The night before, mash the banana in a bowl or jug until smooth. Stir in the chia seeds, oats, milk, water, and cinnamon. Cover and refrigerate overnight.

In the morning, decant the amount you want into a cereal bowl, and add the flaxseed. You may need to stir in more water or milk if the consistency is too thick.

I heat it up in the microwave for 1-2 minutes on full power, but you can simmer on the hob if you have more time. I like to eat it covered with blueberries, raspberries and strawberries, and I usually sprinkle over a few pumpkin and sunflower seeds.

    Mmm this sounds great! I make it by mixing Alpro Coconut yoghurt with oats and frozen berries and it’s AMAZING! Definitely going to try this banana version though!!

      Oh that sounds all kinds of delicious! I’m gonna try your version too! I definitely make use of frozen berries – especially when the fresh ones are out of season.
